Franz Egger has been making apple cider for two decades, and five years ago decided to use the “sur lie” method (without adding sulfur). However, the residue on the bottom of the bottle poses an aesthetic problem: sparkling wine must be clear! Therefore, the residue was simply shaken into the stopper and consolidated there. Tratter Engineering was commissioned to technically realize this concept and bring it into series production.
